To flatten a stone, wet it with water or oil (depending on the type of stone) and rub the flattening plate evenly over its entire surface until all grayish evidence of previous sharpenings has disappeared.

I got the 80 grit and 350 grit 8" wheels based on their recommendation. The wheels are the 4 in 1 design with grit on part of the side and with 1/4" radius corners. The wheels are absolutely beautiful.

This can save you from having a lot of different stones laying around your shop. The downside is you will likely have to dress the stone more often and so you will go through your stones faster.
